Cream Cheese Pizza Crust?? Is it Nommy??

YES!!!! IT IS FREAKING DELICIOUS!!!  Such a strange recipe.... I would have NEVER thought to do this, but it was WONDERFUL!!  It's a little too fatty for me to have on a daily basis, but every once and awhile as a special treat it wouldn't be too bad.  I loved it, hubby loved it, and more importantly my SUPER PICKY eater LOVED IT!!!  It is Ku approved which means a lot to me.


Con is that it's a soft crust- you have to eat it with a fork, but it's totally worth it!!


This is a gluten free recipe so if you can't have gluten it's a FANTASTIC alternative!!


Here's the recipe:



Ingredients:
·         6 eggs
·         6 oz cream cheese (3/4 package) at room temperature
·         1 teaspoon garlic powder
·         1½ teaspoon oregano or other Italian seasoning
·         ½ teaspoon salt
·         pinches of black and/or cayenne pepper
·         1 cup (or a little more) shredded Italian cheeses, at least half of which is a hard cheese (Parmesan, Assagio)
Preparation:
Heat the oven to 350° F.
1) Be sure the cream cheese is at about room temperature. Using a regular blender, food processor, or (my preferred) stick blender, mix the egg and cream cheese until well blended. Add the salt and spices and blend again.
2) Spread cheese in bottom of well-buttered 9X13 pan. I often use an Italian blend such as Trader Joe's Quattro Formaggio. Pour egg mixture over the cheese, and bake for 22-25 minutes, or until the top is browning.
3) Remove from oven, add pizza toppings, and bake until done - about another 10-15 minutes.
Makes 8 servings.

I mean how many times can you say that you ate pizza with very few carbs and a crap ton of protein??  Go try it out!!

French Toast is NOMMY!!!

I was in the mood for French Toast today, but I don't usually stock bread in the house so I had to think on the fly.... I decided to make my NOMMY PANCAKES.... and threw 1/3 cups eggs whites into a bowl and turned my pancake recipe into 2 pancakes instead of just 1 big one.  I coated my pancakes with the egg and then threw them back on the stove.... it was perfect!!  AND EVEN MORE PROTEIN!!!

The numbers for JUST the extra egg topping:
Calories: 50
Fat: 0
Carbs: 0
Protein: 10

ALSO- get ready... get set.... get PIZZA!!!  I'll be trying out 3 new recipes for pizza crust this week... all of them are low fat and low carb... they even have high protein!!  I'm SO excited!!  I'll be reviewing them (with the help of my husband) on my blog the next day... stay tuned for the reviews and recipes!!

Saute'ing is Nommy!!

Ok here's the dealio..... I love sauteed garlic & onions, but olive oil & butter are SUPER FATTENING...

Today's tip:  Use cooking spray to saute!!!!  Seriously... it's no fat, no carbs, no calories............ PERFECTION!!  Spray a good deal of cooking spray into a pan & go to town :-D

I Scream You Scream we all Scream for Nommy Ice Cream!! (No Ice Cream Maker Required)

Yes... I said it... ICE CREAM.  I had a big heaping bowl of chocolate... hubby had some strawberry... and my kids are currently thanking me over and over and over and over for their vanilla... :-D  Score one mom!!   AND I DO NOT OWN AN ICE CREAM MACHINE!!

I'll start by telling you the numbers because you are just not going to believe this... ready?

Ok here it is:
Calories: 250
Fat: 1.5
Protein: 53
Carbs: 13


YES I SAID 53grams OF PROTEIN!!!!!

Ok here's the secret- make your protein shake... there are HUNDREDS of recipes online... the numbers will change if you change the recipe, but you CAN change it... just take the numbers from that shake.... here is my recipe...

4oz of egg whites
4oz skim milk
1 scoop of whey (any flavor will work... I used chocolate, strawberry, and vanilla)

Put it in the blender or a shaker cup and blend it all up then pour it in a small ziplock bag.

Fill a large ziplock bag 2/3 of the way full of ice and 1/2 cup of table salt- not rock salt- TABLE salt.

Put the small bag into the large bag... grab some pot holders so your hands don't freeze and start shaking.  Shake for about 3-5 minutes or until the ice cream reaches the consistency you want... pour into a bowl and serve.  :-D

Nommy Breakfast Your Kids Won't Know is Healthy!!

I don't know about you, but I have the worst time getting my kids to eat healthy... this last year has been a constant struggle of trying to make sure that their nutritional intake is up to par... and it is a CHORE.  I found a waffle recipe that takes about 30 minutes to prepare plus the 20 it takes to make each waffle... it was healthy enough, but not great.  I eat protein pancakes for breakfast, but didn't think there was anyway my kids would eat them because they are SO HEALTHY!!  So a few days ago I was sitting down eating my protein pancakes  when my daughter said "That smells good..."  I said "Thanks!  Want to try a bite?"  She said yes and that led to 2 of my other sons trying it as well (the baby is too young for pancakes :-)) They LOVED them... so lately I've been making them... my 3 year old isn't a huge fan of the whole pancake, but he's a big egg eater so that's ok... my older 2, who are my nutritionally challenged picky eaters, absolutely adore them!!  Here's the recipe:

Protein Pancakes:
1/2 cup of egg whites
1 scoop of vanilla protein powder
3 TBS splenda
3 tsp cinnamon (to taste)

Whisk together and put into a pan.  Cook just like a regular pancake.

My son likes PB on top of his and my daughter eats honey or sugar free syrup... confession- I sometimes put Nutella on mine ;-)  Berries are also a great option!!  Honestly though- these are great without any toppings!!

Debunking the Lie- You CAN Have REALLY Nommy Desserts!!!

When I went on this diet I was devastated... no cookies??  no brownies??  no dessert!!!???

NOOOOOO!!!!!!


I thought I was done... I knew I could substitute the butter... I could substitute the sugar... but the brown sugar killed me.  Then I found this...

Yes Ladies and Gentlemen.... BROWN SUGAR SUBSTITUTE!!!  No calories... only 1 gram of carbs per tsp!!  WHAT???  Cookies HERE I COME!!  So here's my recipe of the day... I found the original recipe on Taste of Home.  It was in their low carb, low fat section.... but we can do better!!

Here's my take on the recipe:

INGREDIENTS

    • 1 cup packed brown sugar substitute
    • 3/4 cup unsweetened applesauce
    • 1/4 cup molasses
    • 1/4 cup egg substitute
    • 2  1/4 cups wheat flour
    • 2 teaspoons baking soda
    • teaspoon ground ginger
    •  teaspoon ground cinnamon
    • 2 teaspoon ground cloves
    • 4 tablespoons Splenda

INSTRUCTIONS

    1. In a large bowl, beat the brown sugar substitute, applesauce, molasses and egg substitute. Combine the flour, baking soda and spices; gradually add to brown sugar substitute mixture and mix well.
    2. Drop by teaspoonfuls 2 in. apart onto baking sheets coated with cooking spray. Sprinkle with sugar. Bake at 375° for 8-10 minutes or until set. Remove to wire racks to cool. Yield: 34 cookies

For me these are totally acceptable numbers and a totally delicious recipe!!  I definitely recommend it to anyone who like spice cookies... Have a Nom Nom Nommy Day!!
